Shoe Peg Corn Salad
I have never heard of shoe peg corn?? It must be something not available up here in the north, but I’m wondering if you could substitute regular cans of corn. It would certainly make for a very simply salad. Here are the ingredients…
* 2 cans white shoe peg corn
* 2 small cucumbers, diced
* half cup mayonnaise
* 4 green onions, chopped
* 1 medium tomato, chopped
* salt and pepper to taste
but I’m sure that if you want to get creative, you could add or take away a few of the ingredients. I tend to do that all the time. Actually, I think that I would omit the green onions and add dried onion flakes instead. I really don’t like green onions, but I do want to check out this shoe peg corn??
Well, I just did a little looking and here’s what I found… Shoe Peg Corn is simply white corn. It’s very sweet and crunchy and you can find it under the Green Giant label. So, I’m thinking that I just might try using regular canned corn (available up here) and see what happens!
I was just scanning the list of recipes available below and she has some really interesting ones… Vinegar Dumplings sound most interesting!! Not sure that I could eat them, but they certainly sound interesting.
