Gingerbread

1 c. cane syrup
1 c. shortening
1 T each cinnamon, ginger, allspice, cloves
1 c. brown sugar
2 1/4 cups plain flour
1 tsp salt
1 c. buttermilk 2 eggs
1 tsp baking soda
1/4 c hot water

1. Combine syrup and spices in a large pot and bring to a boil.
2. Reduce heat continue simmering until shortening has melted. Remove from heat.
3. Combine dry ingredients and add to syrup mixture. Beat until batter is smooth.
4. Combine buttermilk and eggs and stir into batter.
5. Dissolve baking soda in the hot water and add to batter. Be sure to mix well.
6. Grease and flour 12×9 inch pan and bake for 50 minutes. Check for doneness using a wooden skewer. Return to oven if skewer does not come out clean.

It is thought that from the time Gingerbread arrived in America, there are about a zillion variations.
