Crockpot Chicken Creole
Too busy to cook?? Okay, who really wants to when the nice weather has just arrived?? And since I just picked up a crockpot, I was looking for a few recipes to check out. The ingredients below I usually have on hand… The Louisiana hot sauce and Cajun seasoning I will have pick up. The mushrooms I don’t like, so I won’t even bother with those, but it was part of the recipe so I thought that I would leave in for you mushroom lovers out there.
| 3 lbs. chicken thighs | 1 cup celery, diced |
| 1 red bell pepper, sliced | 1 green bell pepper, sliced |
| 1 onion, sliced | 1 can sliced mushrooms |
| 1 can tomatoes | 1 tsp. garlic powder |
| 1 tsp. sugar | 1 tsp. Cajun seasoning |
| 1/2 tsp. paprika | salt & pepper to taste |
| Louisiana hot sauce to taste | 2 cups minute rice, cooked |
You pretty much toss everything into the bottom of the crockpot, but there are some rules, so you can find out what you need to know here!!
